BMO Round Table 2025: A conference on tradition and future
The event brings together industry leaders, a master butcher, and a philosopher to reflect on the sector's rich history and chart a course for its future. Rooted in strong family traditions and craftsmanship, the Belgian meat sector is navigating a complex and evolving landscape, balancing continuity with change.
The conference will kick off with an interactive session led by renowned butcher Luc De Laet of Butcher's Store by De Laet & Van Haver. He will demonstrate the art of carcass cutting, offering attendees a hands-on exploration of traditional butchery techniques and craftsmanship. More than just a practical demonstration, De Laet will share his perspective on the future of the European meat industry, providing a unique blend of skill and foresight.
The second part of the conference will begin with a keynote from Dr. Maarten Boudry, a Belgian philosopher of science, holder of the Etienne Vermeersch Chair in Critical Thinking at Ghent University, and author of several books and over 50 papers on topics like pseudoscience, climate policy, and evolutionary epistemology. Known for his sharp analytical skills and talent, Dr. Boudry will bring a critical lens to key issues facing the industry. His talk will provide clarity on complex topics such as ethics, sustainability, and consumer challenges, encouraging deeper reflection on the sector's direction.
The event will conclude with a pivotal round table discussion titled "Looking Back, Thinking Ahead – 20 Years of Belgian Meat." The panel will feature a mix of seasoned leaders and new voices, including:
