Cured ham exports grew 9.47 percent during first half of 2025
The sector also saw a total export value of 371,050,556 euros, which is 15.23% higher than the 322,022,461 euros from the previous year.
The average global price per kilogram of ham has also grown by 5.26%, reaching 12.66 euros, up from 12.03 euros per kg in 2024. The average price in EU countries was 11.87 euros, while in non-EU countries it was 14.42 euros, showing increases of 6.27% and 2.84% respectively.
Key Markets and Trends
Globally, European Union countries imported a total of 20,189 tons during this period, an increase of 8.04% compared to the same period in 2024. Non-EU countries recorded a volume of 9,109 tons, a 12.77% increase. The EU accounted for 68.9% of cured ham exports, with non-EU countries making up the remaining 31.1%. This sustained growth in non-EU countries is partly driven by a 21.5% price difference compared to the EU.
"These figures reflect the solidity and competitiveness of Spanish cured ham in international markets, establishing it as a benchmark product both inside and outside the European Union. One of the most notable aspects is the increase in the average price, a trend that has been ongoing for some time and seems largely linked to the inflationary pressure affecting the entire food chain in Europe. Despite this increase in price, the sales volume has not only not suffered, but has actually advanced in significant countries like France and Germany," said Álvaro Díaz de Liaño, Marketing and Promotion Director for the Consorcio del Jamón Serrano Español.
Within the EU, the main markets for cured ham continue to be France and Germany, which together account for almost 40% of the export volume. The value of exports to these countries has increased by 18.74% and 6.46% respectively. Other European markets that have increased their export value in the first half of 2025 include Portugal (+33.26%) and Austria (+26.30%).
In terms of formats, 80.32% of the pieces exported were boneless, with their value increasing by 8.64%. China, Austria, and Brazil showed the greatest growth in terms of value for this format. The average price for boneless pieces is 12.98 €/kg, a 5.31% increase from 2024.
For bone-in formats, 1.10% of the pieces were bone-in shoulders, while 18.58% were bone-in hams. The average price for bone-in shoulders has grown by 16.22%, while bone-in hams saw a 10.02% increase, reaching 11.16 €/kg.
"With these results, the Spanish meat sector reaffirms its capacity for internationalization and its competitive strength. Despite the uncertainty regarding tariff evolution in key markets like the United States and China, we are convinced that the joint effort of the entire sector will continue to reinforce the position of Serrano ham as a premium product worldwide," concluded Álvaro Díaz de Liaño.
