Spain: Cured ham exports grow by 12% in value and 7.3% in volume during the third quarter of 2025
The Spanish Serrano Ham Consortium (CJSE) has released export figures for Spanish cured hams and shoulders through the third quarter of 2025. During this period, a total of 45,996.32 tonnes were exported, compared to the volume of 42,875.44 tonnes achieved during the same period in 2024, signaling a 7.28% increase.
Furthermore, the sector recorded exports during this period with a total value of €576,935,372, which is 12.03% more than the previous year, when the figure stood at €514,987,477.
Additionally, the global average price per kilogram of ham grew by 4.43% during this period, reaching €12.54 compared to €12.01 in 2024. Meanwhile, the average price in European Union countries stood at €11.79, compared to €14.21 in Third Countries, representing an increase of 5.38% and 2.99%, respectively.
In global figures, European Union countries imported a total of 31,718.21 tonnes during this fiscal year, an increase of 7.96% relative to the same period in 2024, while Third Countries recorded a volume of 14,278.11 tonnes, a 5.8% increase. Thus, during the first three quarters of the year, the European Union accounted for 69% of cured ham exports, while the remaining 31% corresponded to Third Countries.
"We observe how the top two markets, France and Germany, continue to hold a very relevant weight regarding cured ham, accounting for nearly 40% of the volume with sustained growth throughout the year, as well as in value. Among Third Countries, China's growth stands out in both volume and value, demonstrating that it is a market that is increasingly consolidating. On the other hand, the average price remains on an upward trend, primarily driven by the rising inflation experienced in recent months," says Álvaro Díaz de Liaño, Marketing and Promotion Director of the Spanish Serrano Ham Consortium.
Regarding formats, 79.87% of the pieces exported during this period were boneless, leading to a 6.02% increase in their value. Austria, Mexico, and the Netherlands were the countries that recorded the highest growth in value terms for this format during this period. For its part, the average price of boneless pieces stands at €12.89/kg, representing a 4.74% increase compared to 2024.
Finally, concerning bone-in formats, 1.05% of the pieces exported during this period were bone-in shoulders, while 19.08% were bone-in ham. It is worth noting that the average price of bone-in shoulders grew by 18.86%, compared to bone-in ham, which saw an average price growth of 7.23%, reaching €10.93/kg.
"These results confirm the sector's strength and its ability to compete in international markets. We will have to assess, with the data from the final month of the year, the impact of the emergence of African Swine Fever (ASF), where we remain convinced that the coordinated effort of the entire sector will be key to minimizing it," concludes Álvaro Díaz de Liaño, Marketing and Promotion Director of the Spanish Serrano Ham Consortium.
